really looking good! one note - wifi lights - check the manfacturer for their security settings - there are a lot of people getting their home networks hacked by people exploiting the low default security settings on their "smart" lights (as well as other "smart" products).

without the REW file or more views of other diagnostics, it would appear there is a lot of LF and low mid energy being retained as well as several modes in those ranges which are also not tempered.

my thought on load bearing - what is supporting your inside-out ceiling? if the inside-out is part of your exterior then that is a different level of isolation. otherwise you need to support the ceiling structure :-) my general go-to is 1x plywood or OSB sheathing on the frame, and 2x type-x drywall...

the spacing should be determined by the acoustic behaviour. so if the 3" space works - ok, if not, does it work better at 4" or 6"? thus the short chain trick to make it adjustable. a soft plastic tube around the chain to keep it stable and limit any vibration.
